How to prepare spicy dried plums at home

Dried plums are an ingredient in many different meat dishes and desserts, and they are also a complete snack. You can buy this product in the store at any time of the year, but it's time to make homemade plums right now because the season is in full swing.

The idea of making homemade dried plums was published on the Instagram page of food blogger Mila with the nickname vkusnye__zametki.

Ingredients:

  • peeled plums - 1500 g (choose dense, fleshy plums)
  • salt - 1.5 tsp
  • sugar - 1.5 tsp.
  • Italian herbs spice mix
  • vegetable oil - 200-300 ml (use if you decide to pour oil over the dried plums and store them in jars in the refrigerator. Bring the oil to a boil, but do not boil, and pour it over the plums in the jars).

Method of preparation:

1. Remove pits and spread them on parchment or a Teflon sheets.

2. Top the plums with salt and sprinkle with sugar and Italian herbs.

3. Dry in a home oven or in a dehydrator.

4. If you do this in the over, use +90-95C for 5-8 hours + convection. Open the oven door. Do not dry the fruit too much.

5. If you do this in the dehydrator, use 80 degrees for 5-6 hours. However, it is better to set 3 hours of drying first, then check the plums, and if they are not dry, wait for some more.
