How to prepare popular lemon curd at home
Lemon curd is a popular citrus cream that is used in many desserts today. Its delicate texture, pleasant sourness and bright flavor will complement any dough or mousse. In addition, an extra dose of vitamins will definitely not hurt.

Ingredients:
- egg yolks - 4 pcs.
- sugar - 200 g
- hot water - 350 ml
- corn starch - 50 g
- butter - 25 g
- lemon juice - 120 ml (3-4 lemons)
- zest of 1 lemon
- salt - a pinch
Method of preparation:
1. Mix starch and sugar in a saucepan with a thick bottom. Pour hot water, stir until smooth and bring to a boil, stirring. Remove from heat.
2. Grind the yolks, add some of the hot mass to the yolks, stir and pour the yolks back into the hot mixture.
3. Add a pinch of salt, lemon juice, and butter, stir until smooth and put on fire.
4. Stirring constantly, bring to a boil (until bubbles appear). Remove from heat and add lemon zest.
5. The cream can be stored in the refrigerator for up to 2 weeks (due to the large amount of lemon juice). It can be used for cakes, muffins, pies or pancakes.
