How to prepare lean fish broth
One of the strictest fasts in Ukraine, the Christmas fast, lasts until January 7. During this time, you can't eat meat, fatty fish, dairy products, or eggs. Only on some days is it allowed to eat lean fish or fish dishes, as well as vegetables, including delicious mushrooms and cabbage.
Yulia Stakhorska, a famous Ukrainian food writer, shared a recipe for a delicious lean dish - fish broth with herbs - exclusively with FoodOboz.
Ingredients:
- fish soup set - 1 kg
- water - 4.5
- dill - 1 bunch
- leek - 1 pc
- carrot - 1 pc
- onion - 1 pc
- pepper mix
- ice - 1 cup
Method of preparation:
1. Wash the fish soup set thoroughly, especially the head.
2. Put the bones and head in a 5-quart saucepan with the dill, leek, whole onion and pepper mix.
3. Pour cold water over everything, cover and bring to a boil.
4. As soon as the broth has boiled, add 1 cup of ice cubes and bring it back to a boil.
5. After boiling, cook on low heat with the lid slightly open for 30 minutes.
6. Strain the finished broth immediately, otherwise it may become bitter.
You can store this broth in the refrigerator for up to 5 days.
