How to prepare hearty vegetable soup with pasta quickly
First courses always come in handy when you don't know what you can quickly prepare for lunch or dinner that is both tasty and satisfying. One such dish is pasta soup. It can be made with vegetable broth, and you can also add meat to it to make it hearty.
The recipe for pasta soup was shared by food blogger Maria (smakoluk.ua) on her Instagram page.
Ingredients:
- chicken wings - 2 pcs.
- water - 3 liters
- onion - 1 pc.
- carrots - 1 pc.
- potatoes - 3 pcs.
- filler vegetables (peas and beans - 100 g each)
- pasta - 100 g
- spices (salt, pepper, paprika, Italian herbs)
Method of preparation:
1. Cook the broth until the chicken is ready.
2. Sauté onions and carrots.
3. Remove the meat from the finished broth and add potatoes and sautéed vegetables. Cook until tender.
4. Whisk with a blender until smooth and cook for another 10 minutes. If the mass is too thick, add more water (the soup should not be too thick).
5. Add vegetables and spices. Cook until they are tender.
6. Add the chopped meat and pasta. Bring to a boil. Remove from heat and leave, covered, for another 15 minutes.
