How to prepare healthy zucchini pancakes

Zucchini is a very budget-friendly and tasty vegetable that can be used to make many delicious and satisfying dishes, such as salads, pasta, pies, and pancakes. Still, pancakes are often cooked with a lot of oil, which makes them too greasy and not very tasty.
Nutritionist Anna Kashpur shared a recipe for delicious and, most importantly, healthy zucchini pancakes, which are very tasty and low-fat, on Instagram.
Ingredients:
- medium zucchini - 3-4 pcs.
- eggs - 3 pcs.
- rice flour - 50
- salt, pepper, spices - to taste
Method of preparation:
1. Grate the zucchini on a coarse grater.
2. Squeeze out the excess liquid well.
3. Add the eggs, flour and spices, stir everything thoroughly and be sure to leave it for 5 minutes.
4. Fry the pancakes in a dry pan without oil or in coconut oil.
