How to prepare authentic kharcho soup according to all Georgian traditions
Kharcho is a very spicy and savory traditional Georgian meat soup. The important components of the first course are a rich broth and a good combination of spices. So, knowing some of the nuances, cooking this dish will not be a hassle.

Ingredients:
Broth:
- beef brisket - 2 kg
- onions - 2 pcs
- carrots - 1 pc
- celery leaves - 1 bunch
Additionally:
- vegetable oil - 50 ml
- onion - 1 pc
- tomatoes - 1/2 pcs
- tkemali sauce - 100-200 ml
- adjika (dry) - to taste
- ucho-suneli - 1 tbsp.
- coriander - 1 tsp.
- rice - 5 tbsp
- garlic - 3 cloves
- cilantro - 1 bunch
Method of preparation:
1. Pour water into a saucepan. Add beef, whole onion, carrots cut into large pieces and celery roots.
2. Boil the broth for 90 minutes and then strain.
3. Cut the beef.
4. Chop the onion separately. Fry in vegetable oil until soft.
5. Add tomato sauce and fry for a few minutes.
6. Add tkemali sauce, adjika, ucho-suneli, coriander and salt. Fry for a few minutes.
7. Pour the broth over the mixture.
8. Add rice and beef at the same time. Cook until the rice is tender.
9. Chop the garlic and cilantro. Add to the broth and cook for another 10 minutes.
