How to pickle eggplant for the winter

This is a delicious preparation for winter. Eggplant here is diced and combined with a lot of other vegetables. Such a dish turns out very spicy and juicy, a wonderful addition to meat or fish.

The idea of cooking pickled eggplant is published on the Instagram page of food blogger Myroslava (miroslava_sapchenko).

Ingredients:

  • eggplants - 2 kg (cut into rings, and thicker ones into 4 pieces).
  • tomatoes - 5 medium-sized
  • sweet pepper - 5 pcs
  • hot pepper - 1 pc
  • garlic - 2 heads

Method of preparation:

1. Slice the eggplants into rings, salt and leave for 20 minutes.

2. Pass everything except the eggplant through a meat grinder.

3. Rinse eggplant of salt and add ground vegetables and other ingredients in the following order:

  • salt - 1 tbsp
  • sugar - 0.5 cup
  • oil - 0.5 cup
  • vinegar - 0.5 cup
  • after boiling, cook for about 20 minutes.

4. Pour into sterilized jars and close with lids.
