How to pickle beet borscht dressing for the winter
Pickled beet borscht dressing is very convenient because it significantly speeds up the process of cooking borscht: just add a little dressing to the broth and bring it to a boil. The borscht dressing is made from simple and affordable ingredients, can be stored for a long time, and can also be eaten as a salad.
Food blogger Yulia Symonchuk (cook_julija_simonchuk) shared a recipe for beet borscht dressing on her Instagram page.
Ingredients:
- red beets (boiled) - 3 kg
- sweet pepper (peeled) - 1 kg
- onions (medium) - 4-5 pcs
- oil - 1 tbsp (200 ml)
- vinegar - 1 tbsp
- sugar - 1 tbsp
- water - 1 tbsp
- salt - 1.5 tbsp
Method of preparation:
1. Grate the boiled beets.
2. Chop the pepper and onion.
3. Put all the vegetables in a saucepan.
4. Mix oil, vinegar, water, salt and sugar. Pour over the vegetables.
5. Bring to a boil over medium heat and cook for another 25-30 minutes.
6. Remove from heat and put the vegetables in sterilized jars. Close with lids and store in a cool place.
