How to marinate eggplants with garlic, basil and capers: you can eat in 2 hours

Eggplants are ideal vegetables that can be prepared in many ways, including frying, canning, pickling, making salads, grilling, and stuffing. They also make delicious eggplant caviar for the winter.

Chef Yevhen Klopotenko shared a recipe for delicious pickled eggplant with chili peppers, basil, and garlic on his website.

Ingredients:

  • eggplants – 2 pcs.
  • garlic – 3 cloves.
  • olive oil – 150 ml
  • capers – 1 tbsp
  • basil – 2 sprigs
  • chili pepper – 1/3 pc
  • salt -–to taste

Method of preparation:

1. Wash two eggplants and cut them into slices.

2. Fry the eggplants on both sides until golden brown in a frying pan with 150 ml of olive oil.

3. Finely chop the garlic, chili and capers.

4. Separate the leaves of two sprigs of basil, and wash and chop them.

5. Put capers, chili pepper, garlic, and basil in a bowl. Add salt and olive oil and mix.

6. Put the fried eggplant in a bowl with the dressing, mix lightly, and leave in the refrigerator for at least 2 hours.

It will turn out very tasty, spicy, and fragrant!
