Chef Yevhen Klopotenko shared on his website a recipe for a delicious, light, and flavorful cake with lemon zest and juice that takes only 45 minutes to prepare.
Tips from the cook:
1. The main ingredient that makes the cupcake tender and crumbly is butter. The fatter it is, the tastier the cupcake will be.
2. The second point is that by whipping the butter with sugar and eggs, the mixture is saturated with air, which raises the cake during baking. Therefore, after adding the flour, you do not need to knead the dough for a long time, because this will lead to the formation of gluten, which will make it dense.
3. Do not open the oven door for the first 30 minutes, as the dough may settle due to the temperature difference. Check for doneness with a wooden skewer: insert into the cupcake and pull out, if there are no traces of dough, the cake is ready. The cupcake should cool completely in the mold.
Ingredients:
- flour – 250 g
- baking powder – 1 tsp
- zest and juice of 2 lemons
- salt – 1/2 tsp
- butter – 100 g (+20 g for greasing the mold)
- sugar – 150 g
- eggs – 2 pcs
- vanilla sugar – 1 tsp
- sour cream – 125 g
Method of preparation:
1. Preheat the oven to 180°C.
2. Soften the butter.
3. Grate the zest on a fine grater and squeeze the lemon juice.
4. Dough: mix the butter and sugar, add the zest, salt, and beat until creamy.
5. Then add the eggs and sour cream and continue beating.
6. Then pour in the lemon juice and mix.
7. Sift in the flour, add the baking powder and vanilla sugar, and continue to beat until smooth.
8. Grease a baking dish or portioned molds with butter, pour in the batter, and place in the oven for 45 minutes at 180°C.
