How to make the perfect Lviv syrnyk: if you're tired of casseroles

Syrnyky are commonly prepared in various ways: in sauces, with fillings, dried fruits, with or without flour or semolina, and so on. However, they have had a competitor for quite some time, namely Lviv syrnyk. It is also prepared in different ways, but most often it looks like a classic cottage cheese casserole, though it is chocolate-based and has chocolate chips on top. It's perfect for those who are still undecided whether they want syrnyky or casserole.

On her Instagram page, pastry chef Olena (boreyko_cakes) shared one of the ways to make Lviv syrnyk.

Ingredients:

  • flour - 300 g
  • cocoa - 50 g
  • baking powder - 10 g
  • butter/margarine - 150 g
  • eggs - 2 pcs
  • sugar - 150 g

Curd filling:

  • cottage cheese - 1500 g
  • eggs - 8 pcs
  • sugar - 150-200 g
  • vanilla sugar - 1 p
  • corn starch - 35 g
  • butter - 200 g
What to cook with cottage cheese.
  • zest of 1-2 lemons
  • juice of 1/2 lemon
  • raisins -150 g

Method of preparation:

1. Prepare the base. Sift flour, cocoa, and baking powder into a bowl. Mix well.

2. Add eggs and melted butter and knead the dough.

3. Divide into 2 parts. Form into a sausage and put in the freezer for 1-2 hours.

4. Prepare the filling. Melt the butter and beat it with the rest of the ingredients with an immersion blender.

5. Add the raisins at the end and mix again.

6. Grate the first part of the dough onto the bottom of the mold.

7. Add the filling.

8. Grate the second part of the dough on top.

9. Bake at 160-180 degrees for 1 hour.
