How to make the perfect dough for the thinnest pancakes that don't tear: we share a secret and a recipe
Pancakes are an ideal dish that can be used as a base for dishes, sweet and savory cakes. They can also be cooked as an independent dish with various fillings, such as meat, mushrooms, cabbage, offal, fish, as well as berries, cheese, poppy seeds. But the most important thing in cooking is to make the perfect dough.
Cook Victoria (cook_with_me_at_home) shared a recipe for delicious thin pancakes with milk, poppy seeds, and sugar on Instagram.
The secret to perfect dough: add hot milk and butter to the dough!
Ingredients:
For the dough:
- eggs - 4 pcs.
- sugar - 100 g
- vanilla sugar - 15-20 g
- salt - a pinch
- warm milk - 1 liter
- flour - 450 g
- dry poppy seeds - 90 g
- butter - 60 g
- vegetable oil - 30 ml
For the filling:
- poppy seeds - 200 g
- sugar - 100 g
- hot milk - 200 ml
- butter - 100 g
Method of preparation:
1. Dough: lightly beat the eggs with a whisk with sugar and salt, pour in 1/3 of the warm milk, stir, gradually sifting the flour, beat until smooth. Add the poppy seeds and mix again, then pour in the remaining milk, oil, and melted butter, and beat until smooth again. Leave the dough for 30 minutes at room temperature.
2. Heat a frying pan, add oil and fry the pancakes until golden brown and cooked on both sides.
3. Filling: grind poppy seeds with sugar. Add hot boiled milk to this mixture, stir and put in a water boiling bath for 10 minutes, heat, stirring constantly. Remove, add the butter and stir until smooth.
4. Grease the pancakes with poppy seed filling and roll them up.
Serve the finished pancakes with sour cream, jams, or condensed milk.
