Preparing dough for profiteroles or eclairs takes a little time, but it requires a lot of attention, precision, and concentration. And, quite often, it happens that the pastries don't turn out as expected. To prevent this from happening, we suggest paying attention to this recipe.

Food blogger Alla Phil posted a recipe on Instagram for the perfect dough for profiteroles and eclairs that will always work. In addition, she provided the top 10 of her favorite salty and sweet fillings.

Ingredients:

  • Milk - 250 ml
  • Butter - 100 grams
  • Salt - a pinch
  • Sugar - a pinch
  • Flour - 160 g
  • Eggs - 4 pcs

Method of preparation

1. Pour the milk into a saucepan or a pan with a thick bottom, add butter, sugar, and salt.

2. Put on the stove and heat, stirring, until the mass begins to boil. Immediately reduce the heat to low.

3. Add the flour and mix everything quickly and thoroughly. Keep on the stove for another 3 minutes and stir constantly.

4. Remove from the stove, transfer the mass to a bowl and cool for 10 minutes.

5. In a separate bowl, beat the eggs with a fork.

6. Gradually add the beaten eggs to the dough, beating with a mixer.

7. Place the mass in a pastry bag and pipe: strips +-12 cm long for eclairs, balls for profiteroles.

8. Be sure to keep the distance, as the products increase in size during baking.

9. Bake in a preheated 190° oven for 20 minutes. After the time is up, open the oven for 1 second and close it immediately. This is to allow excess steam to escape.

10. Reduce the temperature to 170° and dry for another 15 minutes. After baking, cool the products completely.

  • Custard: 4 egg yolks, 125 ml milk, 50 g sugar, 1 tbsp flour, 1 tsp vanilla sugar, 50 g butter.
  • Butter cream: condensed milk 200 g, butter 200 g.
  • Chocolate: cream cheese 200 g, boiled condensed milk 200 g, cocoa 1 tbsp.
