How to make real Odesa-style eggplant caviar

Eggplant is a very tasty and healthy vegetable that can be used to create many different dishes: stews, barbecue, or rolls. It can also be pickled with garlic, and, of course, made into delicious caviar.

Odesa-based chef Sava Libkin told us how to make real Odesa-style eggplant caviar and shared its main secrets and recipe on Instagram.

Ingredients:

  • eggplant - 3 pcs
  • tomatoes, preferably Mikado - 1 pc
  • onion - 2 pcs
  • garlic - 2-3 cloves
  • parsley - 1/2 bunch
  • salt - to taste

Method of preparation:

  1. Wash the eggplants and prick them with a fork so that they do not "explode".
  2. Bake at 200 C, but it's better to grill them as it will give them a nice flavor.
  3. Bake the tomatoes and onions in the oven after the eggplants so that the rough skin comes off well.
  4. Put the finished eggplant on a board and let it cool.
  5. Then chop the eggplant, tomatoes, and onions very finely.
  6. Add the chopped garlic and chop everything well again with a knife to get a smooth consistency.
  7. At the very end, add the herbs and salt to taste.

This caviar can be eaten immediately with fresh bread or homemade dried croutons.
