How to make pumpkin cheesecake: a variant of a seasonal autumn dessert

Pumpkin season is in full swing. Therefore, this healthy and budget-friendly product is worth using in the preparation of various dishes: soups, appetizers, and spectacular desserts. A delicious pumpkin cheesecake will especially impress with its taste.

The idea of making pumpkin cheesecake was published on the Instagram page of food blogger Alex Mil (mil_alexx).

Ingredients for the cheese layer:

  • cottage cheese 0.2% - 400 g
  • white yogurt - 100 g
  • eggs - 2 pcs
  • flour - 4 tbsp (you can choose rice flour)
  • vanilla sugar - 10 g
  • sugar - 100 g or a substitute - 50 g

Ingredients for the pumpkin layer:

  • ready-made pumpkin - 500 g
  • flour - 2 tbsp
  • sugar substitute - 50 g
  • eggs - 2 pcs

Method of preparation:

1. Cut the pumpkin into small pieces.

2. Bake until soft at 180 degrees for 30 minutes.

3. Mash the pumpkin and add 2 eggs, 2 tablespoons of flour and 50 g of sugar substitute, mix with a whisk.

4. Whip 400 g of cottage cheese, 2 eggs, 4 tbsp of flour and a little vanilla sugar and 50 g of substitute with a blender.

5. Put a spoonful of cottage cheese and pumpkin puree into the baking dish covered with parchment alternately.

6. Place in the oven for 45 minutes at 180 degrees Celsius.
