How to make puffy zucchini pancakes: just add one ingredient
Zucchini is an ideal vegetable for preparing delicious, hearty and simple dishes, such as pancakes or caviar. They are also pickled and made into delicious spicy salads for the winter.
Chef Yevhen Klopotenko shared a recipe for delicious healthy zucchini pancakes, which will turn out fluffy and successful thanks to sour cream, on his website.
Ingredients:
- zucchini - 1 pc.
- eggs - 1 pc.
- flour - 3-4 tbsp.
- sour cream - 1 tbsp.
- garlic - 1 clove.
- parsley - 5 sprigs
- vegetable oil - 5 tbsp.
- natural yogurt - 1 cup
- salt, pepper - to taste
Method of preparation:
1. Wash and grate the zucchini. Squeeze out the excess juice.
2. Add pepper, salt and egg and mix.
3. Wash the parsley well, chop it finely and add to the zucchini.
4. Add sour cream and flour and mix until smooth.
5. Heat a frying pan, add oil and fry the pancakes.
6. Put the pancakes on a paper towel to drain the excess fat
7. Finely chop the mint, add to the yogurt and mix. Add salt, pepper and chopped garlic.
Serve the dish hot with a delicious sauce!
