How to make pancakes from zucchini: the dough is very tender and fluffy
You can even make pancakes from seasonal and budget zucchini. The dish is very satisfying, soft, and fluffy. It is especially delicious with the addition of cheese.
The idea of making pancakes with zucchini was published on the Instagram page of blogger Anastasiia (solopiika).
Ingredients:
- grated zucchini – 125 g
- mozzarella – 125 g
- eggs – 1 pc
- milk – 200 ml
- flour – 170 g
- olive oil – 3 tbsp.
- baking powder – 6 g
- salt – a pinch
Method of preparation:
1. Beat the egg with milk and a pinch of salt.
2. Add grated zucchini and mozzarella.
3. Sift the flour and baking powder, and mix.
4. Pour in the oil and mix again.
5. Fry in a well-heated dry frying pan over medium heat (uncovered).
6. Pour 2 tbsp of batter into a standard large pancake pan.
7. Turn over when small bubbles begin to appear.
