How to make marshmallows at home: an unusual combination of products and the secret of cooking from Yevhen Klopotenko
Marshmallows are a very simple and delicious dessert made from fruit juice, berries, and applesauce. It's worth noting that the first marshmallows were made by the Egyptians back in 2000 BC. The most interesting thing is that back then it was made on the basis of a marsh plant root extract, and only pharaohs ate marshmallows. Nowadays, everyone can make this airy treat at home.
Culinary expert Yevhen Klopotenko has revealed the secrets of making delicious and unusual marshmallows with strawberries and cilantro, which he shared on a completely new YouTube channel (to watch the video, scroll to the end).
Ingredients:
For the marshmallows:
- strawberries - 250 g
- sugar (for proteins) - 80 g
- eggs - 4 pcs.
- water - 150 ml
- agar-agar - 12 g
- liquid honey - 100 g
- cilantro - 10 sprigs
- sugar (for syrup) - 300 g
For rolling marshmallows:
- powdered sugar - 1/2 cup
- starch - 1 tbsp.
Method of preparation:
1. Wash the strawberries and cilantro, put them in a blender, and beat until smooth.
2. Pour water into a saucepan, add honey and agar-agar, and heat the mixture well to thicken it. Be sure to stir so that nothing burns.
4. Then add sugar and cook for another 2 minutes, stirring constantly.
5. Add the strawberry puree to the saucepan, mix well, and cook for 5 minutes.
6. Separate the whites from the yolks, and whisk the whites with the sugar until peaks.
7. Pour the strawberry puree into this mixture and beat well.
8. Very quickly put the mass in a culinary bag and drain the marshmallows, leave at room temperature for 4 hours.
9. Roll the finished dessert in powdered sugar and sugar and serve.
