Lenten mayonnaise does not contain milk or eggs, but it tastes just as good as the classic recipe.

For those who are fasting, this sauce will dilute their daily diet and change the taste of boring pasta or potatoes. On her Facebook page, MasterChef winner Liza Glinska shared her original mayonnaise recipe (scroll to the bottom of the page to watch the video).

The peculiarity of Glinska's recipe is that it contains aquafaba. This is a viscous liquid that is obtained after cooking legumes. It is often substituted for egg white because they have a similar consistency.

So, what you need to make lean mayonnaise:

  • 60 ml of aquafaba;
  • 150 ml of vegetable oil (refined);
  • salt to taste);
  • 1 tsp. mustard;
  • 1 tsp. honey;
  • lemon juice (to taste).

Recipe

1. Mix aquafaba, honey and mustard in an immersion blender.

2. Continue blending the mixture, pouring in a thin stream of vegetable oil.

3. When the mixture looks like mayonnaise, add lemon juice and salt, if necessary.
