How to make honey cake with currants: a classic dessert in a new way


  • honey – 120 g
  • sugar – 150 g
  • butter – 150 g
  • eggs – 5 pcs
  • soda – 1 hour
  • flour – 300 g

Ingredients for the cream:

  • fat sour cream – 500 g
  • powdered sugar – 100 g
  • vanilla
Kneading the dough for the cake

Ingredients for the currant layer:

  • black currants – 300 g
  • sugar – 70 g

Method of preparation:

Butter for the cake

1. Melt honey in a saucepan, and add baking soda.

2. Honey will start to foam.

3. Stir constantly over low heat and wait for the color to turn amber.

4. Then add the oil. Leave the mixture to cool slightly. While it cools, beat the eggs with sugar.

5. Beat until a nice white foam for about 5-7 minutes.

Preparing cream for dessert

6. Add caramel honey and flour to the egg mixture. Mix well.

7. Cover the baking sheet with parchment and pour the dough.

8. Spread the dough evenly with a spatula, not too thin, about 3 mm, and bake at 180 degrees for about 8 minutes.

Method of preparation of the cream:

1. Whip the sour cream with powdered sugar and vanilla.

2. Make the currant layer: cook the currants in a saucepan with sugar, without water over low heat. The currants should release their juice.

3. Whisk everything in a blender and cook again until the consistency of thick jam.

4. Assemble the cake in the mold. Grease each cake in the following sequence: cream-currant-cream-currant, etc. Leave in the refrigerator for several hours, or preferably overnight. Make crumbs from the leftover cakes and decorate.
