How to make homemade mozzarella cheese: without citric acid and rennet
Mozzarella is a long-lasting fresh cheese that is an indispensable ingredient in many different salads and, of course, pizza. It is very easy to prepare at home, as you only need two main ingredients.
Food blogger Valeria (yummy_pp_lera) shared a recipe for Mozzarella cheese on her Instagram page.
Ingredients:
- homemade milk - 3 liters
- vinegar - 8-10 tbsp
- salt - 1 tbsp.
Method of preparation:
1. Heat the milk until warm.
2. Turn off the heat and, stirring constantly, add vinegar 1 tbsp. Continue to add until the curd and light yellow whey are separated. At the same time, stir to gather the cheese into a single ball.
3. Take out the cheese and squeeze out the excess whey, avoiding the lump.
4. Add salt to the whey and stir until hot. Turn off the heat.
5. Put the curd into the hot whey and start stretching it, taking it out and dipping it into the hot whey each time.
6. Form many small balls from one lump.
7. Immediately dip the cheese in ice water to stabilize it. Let it cool down.
