How to make hard cheese at home: the easiest technology

Nowadays, there are a lot of cheeses in stores, and they are all of different quality. Therefore, to be sure of the product's safety, you can make it at home. Following the correct cooking technology, you will get a really tasty hard cheese for your favorite dishes.

Ingredients:

  • cottage cheese - 500 g
  • milk - 500 ml
  • butter - 100 g
  • yolk - 1 pc
  • salt - 0.5 tsp
  • baking soda - 0.5 tsp

Method of preparation:

1. Pass the cottage cheese through a meat grinder or sieve.

2. Pour the milk into a saucepan with a thick bottom. Bring to a boil, reduce heat to a minimum and add cottage cheese.

3. Stirring constantly, heat the curd mass for 5 minutes.

4. Put it in a colander lined with cheesecloth, which has been previously soaked in cold water.

5. When all the whey has drained, put the curd back into the pan.

6. In a separate bowl, mix the melted butter, egg yolk, salt and baking soda.

7. Pour the mixture into the curd mass.

8. Put on a minimum heat or water bath and cook, stirring constantly (for example, with a silicone spatula).

9. When the cheese is smooth and completely melted, put it on cling film and roll it up.

10. Put in the refrigerator for 10-12 hours.
