  1. Separate the whites from the yolks.
  2. Whisk them together.
  3. Add sugar and vanilla.
  4. Beat the mass again until peaks form.
  5. Add the whipped whites to the dough and mix with smooth movements.

The dough will be saturated with small air bubbles, almost invisible to the human eye. This is what will make the pancakes fluffy.

You can also make fluffy American pancakes without baking soda. The recipe was shared by food blogger Oksana Myroniuk on her Instagram page.

Ingredients:

  • Milk - 350 ml
  • Flour - 250 ml
  • Eggs - 3 pcs
  • Sugar - 4-5 tbsp
  • Oil - 4 tbsp
  • Salt - a pinch

Method of preparation:

  1. Separate the yolks from the whites.
  2. Beat the yolks alone first, and then with sugar.
  3. Heat the milk in the microwave.
  4. Pour it into the yolks.
  5. Stir with a whisk.
  6. Sift the flour and mix well. Add the oil and mix again.
  7. Beat the egg whites with salt with a dry mixer until well fluffed.
  8. Add the whites to the total mass, mixing gently.
  9. Fry in a dry preheated frying pan over low heat. Turn over when bubbles appear.
  10. Serve with jam, honey, and condensed milk, if desired.
