How to make eggplant caviar: recipe for a seasonal appetizer
Eggplants are a healthy summer vegetable, and they are also very versatile. You can stuff it, bake it, make a variety of salads, as well as delicious caviar. It is a great addition to meat or porridge or simply as spread.
The idea of making eggplant caviar was published on the Instagram page of food blogger Yulia Symonchuk (cook_julija_simonchuk).
Ingredients:
- eggplant - 3 pcs (medium)
- onions - 2 pcs
- tomatoes - 6 pcs
- garlic - 2 cloves
- vinegar - 1 tbsp
- salt, pepper (red and black) to taste
- oil for frying
Cooking method:
1. Dice the eggplant and fry in a pan until soft.
2. Fry the onion separately until almost cooked and add the grated peeled tomatoes. Simmer over low heat until the liquid evaporates.
3. Add the eggplant, squeeze the garlic, add vinegar (optional, if you like spicy), season with pepper and simmer for 10 minutes.
