How to make delicious carrot muffin: the easiest recipe
Carrots are one of the healthiest vegetables as they contain a lot of essential vitamins like A, K, B1, B2, B5, and B6, as well as a lot of iron, calcium, magnesium, sodium, potassium, phosphorus, and chlorine. In addition, carrots are a low-calorie product, with only 35 kilocalories per 100 grams. Experts recommend eating carrots for people with diabetes, and especially for children. It's worth noting that carrots are one of the main ingredients in soups, and they also make great muffins and healthy pies.
Nutritionist Anna Kopus shared a simple recipe for a delicious carrot muffin that even children will eat on Instagram.
- grated carrots - 400 g
- wheat flour (can be whole wheat) - 150 g
- almond/oat flour - 200 g
- ground walnuts - 100 g
- butter - 150 g
- sugar - 200 g (if carrots are sweet, then 150 g)
- eggs - 2 pcs.
- oil - 60 ml
- baking soda - 1/3 tsp + lemon juice/vinegar
- zest of 1 orange
- salt - a pinch
- vanilla, cinnamon, nutmeg - to taste
Method of preparation:
1. Beat soft butter with sugar. Add oil and eggs and beat again.
2. Grate the carrots, add them to the mixture and mix.
3. Sift the flour, combine it with the baking soda, mix and add to the carrot mixture. Stir the finished batter.
4. Preheat the oven, put the mold in for 1 minute, take it out and grease with oil.
5. Pour the batter into the mold and bake the muffin at 180 C for 30 minutes and then at 150 C for another 10-15. You can also pour the batter into several molds.
5. Garnish with melted dark chocolate and chopped nuts.
