Custard is used in all kinds of desserts: eclairs, mousses, puddings, and cakes. It is a versatile cream that can decorate any confection and make it unique. Despite its ease of preparation, custard sometimes does not turn out as desired. But the situation is quite fixable.

Ingredients:

  • Milk - 500 ml
  • Eggs - 2 pcs
  • Starch - 40 g
  • Vanilla sugar
The consistency of the cream should resemble thick sour cream

Method of preparation:

1. Pour milk into a saucepan and add vanilla extract, bring to a boil and turn off.

2. Meanwhile, break the eggs into a deep bowl, add the regular sugar, salt and starch and beat well with a mixer until fluffy and homogeneous.

3. Gradually pour the milk into the egg mass, whisking.

4. Put the mixture back into the saucepan and put it on low heat.

5. Stirring constantly, bring the mixture to a boil and cook until bubbles form and remove from heat.

6. Rub the hot cream through a sieve to get rid of grains and lumps.

7. Cover with foil and refrigerate for 2-4 hours.
