How to make custard for eclairs: the secrets of a good consistency
Custard cakes are a popular dessert in French cuisine. They are loved all over the world for their crispy base and delicate buttercream inside. It has enough cooking nuances that many housewives do not know about. So, it's worth figuring it out.
Food blogger Nataliia Zarechynska shared a recipe for a successful custard. It was published on Instagram.
Ingredients:
- Milk - 200 g
- Cream - 50 ml
- Egg yolks - 60 g
- Sugar - 50 g
- Vanilla
- Butter - 18 g
- Corn starch - 22 g
Method of preparation:
1. Mix the yolks with sugar and starch.
2. Milk with vanilla bring to a boil.
3. Gradually add the milk to the egg mixture.
4. Put the mixture on the stove and bring to a boil. Cook for a few minutes.
5. Remove from heat, add butter, strain through a sieve. Cover with cling film and cool.

Ingredients:
For the dough:
- Flour - 300 g
- Water - 500 ml
- Butter - 200 g
- Eggs - 9-10 pcs.
- Salt - a pinch
For the cream:
- White chocolate - 180 g
- Hot cream - 120 ml
- Cold cream - 300 ml
- Cream cheese - 120 g
- Coconut flakes - 30 g
- Gelatin - 5 g
- Water - 30 ml
The method of preparation of the cream:
1. Pour gelatin with water.
2. Pour hot cream over the chocolate and let stand for a few minutes.
3. Add coconut and gelatin. Beat with a blender.
4. Add cold cream and cheese. Beat.
5. Mix water, butter and salt in a saucepan. Bring to a boil.
6. Add flour and make a cream. Put on medium heat and cook for another 30 seconds.
6. Transfer to a container and let cool.
7. Beat the eggs with a fork and gradually add to the cream.
8. Form eclairs and bake at 180-200 degrees for 35-40 minutes.
