How to make buckwheat dessert: without baking and sugar
If you suddenly thought that buckwheat can only be cooked and served as a side dish, this is not the case. Without any effort, a lot of ingredients, and culinary operations, you can make a delicious buckwheat dessert – glazed curds. They turn out so delicious that it's hard to tell them apart from the ones you buy.
Natalia Kedyk, a nutritionist, shared her recipe for glazed buckwheat curds. It was posted on Instagram.
Ingredients:
- Green buckwheat - 120 g
- Dates - 120 g
- Coconut flakes - 30-40 g
- Milk - 2-3 tbsp.
- Vanilla
- Lemon juice
For the glaze:
- Chocolate
- Butter and oil
- Cocoa powder
Method of preparation:
1. Rinse the buckwheat and leave it in water for 2-3 hours.
2. Rinse again and blend in a blender.
3. Dates soak in boiled water for 10 minutes and put in a blender.
4. Pour in the milk, add the coconut paste or oil, and beat with a blender.
5. Add coconut flakes and lemon juice to the mixed mass.
6. Put the resulting mass into molds and put it in the freezer. Let the desserts harden completely.
7. In the meantime, prepare the glaze for the cheesecakes. There are two ways to prepare it: melt the butter and cocoa in a water bath, or melt regular chocolate and pour it over the cheesecakes.
