How to make authentic Japanese moti: do not fall apart and do not stick to hands
"Moti is a popular Japanese dessert that doesn't need to be baked. These cakes are based on rice flour. The dough from this product is quite viscous and simply melts in your mouth.
Food blogger Khrystyna with the nickname foodblog kristi shared her tips on how to make delicious homemade Moti on Instagram. You can choose any jam for the filling.
Ingredients:
- glutinous rice flour - 100 g
- corn starch - 20 g
- powdered sugar - 30 g
- water - 160 ml.
- sunflower oil - 15 ml.
- food coloring
Ingredients for the filling:
- cream cheese - 250 g
- Powdered sugar - 50-60 g
- jam - 80 g
Method of preparation:
1. Combine glutinous rice flour with powdered sugar and cornstarch.
2. Add food coloring, water and oil.
3. Stir the mixture until smooth.
4. Pour the mixture into a non-stick frying pan and, stirring vigorously with a spatula, brew the mass until it is transparent and homogeneous.
5. Put the finished dough on cling film and wrap it.
6. For the cream, combine the cream cheese with the powdered sugar and put it in a pastry bag.
7. Prepare the jam.
8. Let the dough cool well, divide it into 6 pieces and roll out each of them.
9. Put the filling.
10. Form moti, pinch the edges of the dough in the center.
11. Remove the edges.
12. Dust the moti with starch. Put on parchment and refrigerate for an hour.
