How to make a versatile mushroom sauce: for pasta, chicken and dumplings
It is very easy to diversify the usual pasta, meat, or the same dumplings, namely thanks to the sauce. One of the most versatile is considered to be mushroom sauce. It successfully combines spicy spices, hot garlic, and herbs. To make it have a pleasant consistency and be quite thick, you should add a little starch.
Chef Vasyl Mishlen shared a recipe for a versatile mushroom sauce for pasta, dumplings, and chicken on his Instagram page.
Ingredients:
- butter – 30 g
- olive oil – 2 tbsp
- cumin – 2 sprigs
- onion – 1 pc
- garlic – 4-5 cloves
- mushrooms – 400 g
- cream – 200 ml
- green onions – 7-8 pcs
- water\broth – 200 ml
- coriander – 1 tsp
- red pepper\chili flakes – 1 tsp
- corn starch – 1 tsp (you will need to dissolve it in 100 ml of cold water)
Method of preparation:
1. Melt butter and olive oil in a frying pan with cumin.
2. Take out the cumin and fry the onion and garlic.
3. Add mushrooms, coriander, and chili flakes. Stir to combine. Cook until the liquid evaporates.
4. Pour in the cream. Stir to combine.
5. Add onion, water, or broth. Stir to combine.
6. Add salt and pepper. Stir to combine.
7. Dissolve starch in water separately. Add to the sauce. Cook until thickened.
