How to make a restaurant dish with hake
Hake is one of the most popular fish on our table. People love it for a reason. It is low in calories and affordable, as well as contains many vitamins and minerals. Many dishes can be prepared with this fish. It can be boiled, fried, steamed, and even baked with dough.
Hellish Chef and expert of the reality cooking show Alex Yakutov shared with FoodOboz an exclusive recipe for hake.
"Hake is a gorgeous fish. But it lacks juiciness. This cooking method will fix that. Spinach will add freshness, lemon zest will add flavor. And the hake will taste like cod, which costs a lot of money."
You will need:
- hake - 1 carcass
- butter - 80 g
- spinach - 1 pack
- zest of one lemon
- ground pepper - a pinch
- add salt - 2-3 pinches
- puff pastry - 200 g
Method of preparation:
1. Defrost the fish and puff pastry.
2. Grate the lemon zest into the room temperature oil. Add ground pepper and salt. Mix everything together.
3. Rub the inside of the carcass with oil.
4. Wash and dry the spinach. Pour the oil into a frying pan and heat. Add the spinach and cover with a lid. Remove the pan from the heat immediately. You do not need to fry the spinach, just sauté it.
5. Squeeze out excess moisture from the spinach and place it on top of the hake halves.
6. Fold the two halves of the fish together to create a closed carcass.
7. Cut the dough into two pieces and roll out. Put the fish on one part and cover with the other part. Pinch the edges.
8. Mix the yolk with a tablespoon of water. Brush the dough with it. Sprinkle with coarse sea salt on top.
9. Bake at 180 C for 40 minutes.
Serve with mashed potatoes.
