How to make a restaurant dish out of chicken liver: Volodymyr Yaroslavskyi shares an exquisite recipe
Chicken liver is a very healthy and tasty product that can be used to make many different dishes, from cutlets, chops, and pates, to salads, cakes, and pancakes.
On Instagram, MasterChef judge Volodymyr Yaroslavskyi shared a recipe for a delicious, gourmet chicken liver and vegetable dish with polenta that will surprise your guests (to watch the video, scroll to the end).
Ingredients:
- liver - 300 g
- onion - 200 g
- carrots - 150-180 g
- celery stalk - 50 g
- butter - 30-40 g
- white wine - 30-40 g
- fresh sage
- thyme and garlic - optional
Polenta:
- corn and buckwheat groats - 35 g each
- milk - 340 g
- butter - 15 g
- Parmesan cheese - 20 g
Method of preparation:
1. Dice the vegetables, fry the carrots first, then add the onions, fry well, and add the celery. Add garlic at the end.
2. Wash the liver, cut off all the films, and add to a frying pan, fry, and add white wine.
3. Cover and simmer the liver for about 20 minutes over low heat, making sure to stir.
4. Add sage, salt and pepper, stir and simmer for another 5 minutes.
5. Add butter to the same place.
6. Polenta: bring the milk to a boil, add the cereal, and be sure to stir so that nothing burns, and cook for 12-15 minutes.
7. Add butter and remove from heat, add Parmesan cheese.
The dish is best served hot.
