How to make a restaurant dish from salmon: a recipe from a Hell's Kitchen contestant
Salmon is a very tasty and healthy fish that is easy to prepare. It can be salted, baked, fried, boiled, served with vegetables, as well as with delicious sauces that will further enhance the flavor.
Hell's Kitchen contestant Ravshan Khamidov shared a recipe on Instagram that will help you prepare a real restaurant dish – salmon baked in leeks with citrus and grapefruit Hollandaise sauce.
Ingredients:
- salmon fillet - 1 pc.
- leek - 1 pc.
- butter - 30 g
- lemon - 1 pc.
- orange - 1 pc.
- lime - 1 pc.
- kumquat
Sauce:
- egg yolks - 2 pcs.
- fresh grapefruit juice - 100 g
- butter - 150 g
- salt - a pinch
- cayenne pepper - a pinch
Method of preparation:
1. Wash the onion well, separate the green parts, and rinse thoroughly in cold water to remove any residual soil and sand.
2. Scald with boiling water and place one on top of the other.
3. Fillet: make diagonal cuts on the skin, salt well on both sides, and brush with butter, put on the onion.
4. Chop the citrus fruits, sprinkle with sugar, and fry in a pan until golden brown.
5. Then put the citrus fruits so that they cover the onions and salmon, wrap them tightly in an envelope, and put them in the oven for 20 minutes at 180°C.
6. Sauce: heat the butter until it is melted.
7. In a water bath, gently boil the egg yolks with salt, pepper, and grapefruit juice until the consistency of liquid sour cream.
8. Remove from the heat and pour in the warm butter, stirring constantly.
