How to make a healthy summer soup: with peas and arugula

Ingredients:

  • water/broth – 1 liter
  • potatoes – 400 g
  • peas – 400 g
  • arugula – 100-150 g
  • onion – 1 pc
  • dry garlic – 1/3 tsp
  • salt, pepper – to taste
Potatoes for making soup
  • vegetable oil – 1 tbsp
  • butter – 25 g
  • dry vegetables for soup – 2 tbsp
  • cream and arugula for serving

Method of preparation:

1. Heat the oil and butter in a saucepan.

2. Lightly fry thin half-rings of onion, add garlic at the end.

Peas for cooking soup

3. Add small cubes of potatoes, peas, and dry vegetables for soup.

4. Add hot water or broth.

6. Add the arugula, cover, and remove from the stove.

7. After a few minutes, use an immersion or bowl blender to grind everything until smooth.

8. When serving, add fresh arugula and cream to taste.
