How to make a delicious dinner from one eggplant: an original recipe
Eggplants are ideal vegetables for making salads, casseroles, rolls, as well as for stuffing, pickling, preserving with honey and chili, etc. They are very satisfying and healthy, as well as easy to prepare.
Cook Yulia Symonchuk shared a recipe for a delicious eggplant, cheese, garlic salad with a delicious dressing on Instagram.
Ingredients:
- eggplant - 1 pc.
- cherry tomatoes - 5 pcs.
- lettuce - a bunch
- garlic - 2-3 cloves
- dill - a bunch
- oil - 1 tbsp.
- wine vinegar - 2 tbsp.
- mozzarella (in brine) - 100 g
- salt, pepper - to taste
Method of preparation:
1. Cut the eggplants into rings and place them on a baking sheet covered with foil and oiled. Drizzle the eggplants with oil too.
2. Bake in a preheated oven at 180 °C for 15-20 minutes.
3. Cut the tomatoes in half, put them in a bowl, add the chopped dill, squeezed garlic, oil, wine vinegar, salt, pepper and mix well.
4. Place lettuce leaves on a plate, eggplant, and then tomato mixture and mozzarella on top.
