How to fry cutlets: covered or uncovered – the experience of food bloggers

Cutlets can be made from almost any meat, but it is the cooking technique that significantly affects their taste and quality. Most people wonder whether to cover the cutlets with a lid or cook them without one. Some cutlets don't need to be fried at all.

Today, FoodOboz editorial team shares a selection of ideas for cooking delicious cutlets in different ways from three Ukrainian food bloggers.

Food blogger vika_tasty notes that she hasn't been able to make cutlets for a long time. She experimented a lot and came up with her perfect recipe. It combines both frying and stewing.

Fried minced meatballs

Ingredients:

  • minced pork - 0.5 kg
  • minced chicken or turkey - 0.5 kg
  • onion - 2 pcs.
  • egg - 1 pc.
  • garlic - 3 cloves
  • water - 150 ml
  • loaf or white breadcrumbs - 300 g
  • salt, pepper - to taste
  • bay leaf - 1 pc.

One of the secrets of the blogger's perfect cutlets is self-made minced meat. It is also important to choose a non-stick frying pan.

Cooking method:

  1. Grind the meat in a meat grinder or beat it with a blender.
  2. Pour water over the loaf or breadcrumbs.
  3. Grind onion and garlic in a blender.
  4. Add the soaked loaf, onion, garlic, and eggs to the minced meat.
  5. Season with salt and pepper.
  6. Mix the minced meat by hand until smooth. It takes 10 minutes.
  7. Form patties and fry them on both sides in a non-stick frying pan with minimal oil.
  8. At the same time, put a goose pot or a thick-bottomed saucepan on the fire, pour a glass of water, and bring to a boil.
  9. Gradually transfer the cooked cutlets from the frying pan to the saucepan, add the bay leaf, and simmer under a closed lid for 20-30 minutes.

Ingredients: ⠀

- minced chicken - 600 g

- eggs - 1 pc.

- onion -1 pc.

- slice of bread - 1 pc.

- milk - 30 ml ⠀

- butter - 30 g

- salt/pepper - to taste

- oil for frying ⠀

- flour for frying

⠀Cooking method:

  1. Wash the fillet, dry it, cut it into small pieces, grind it in a meat grinder
  2. Chop the onion in a blender, meat grinder or grater. ⠀
  3. Pour milk over the bread and leave for a while. ⠀
  4. Chop the butter into small pieces. ⠀
  5. Mix all the ingredients. Add the egg and salt/pepper. ⠀
  6. Form patties, and roll in flour.
  7. Fry the cutlets in a greased frying pan until golden brown on both sides. ⠀

Another idea for delicious cutlets was posted by nataliia_melnichuk on her Instagram page. The recipe calls for baking the dish in the oven.

Baked minced meatballs

Ingredients:

  • minced meat - 700 g
  • onion - 1 pc.
  • loaf - half
  • eggs - 1 pc.
  • potatoes - 200 g
  • cream or milk - 50 ml
  • salt/pepper/spices - to taste
  • olive oil

Method of preparation:

  1. Grate onions and potatoes into the minced meat on a fine grater. Soak the loaf in milk or water and add to the minced meat.
  2. Add egg, cream or milk, salt, pepper, and favorite spices. Mix everything. Beat off the minced meat. Adjust the consistency by adding semolina.
  3. Leave the minced meat for 15-20 minutes.
  4. Form the patties. Cover a baking sheet with parchment, grease with vegetable oil, put the patties, and put in a preheated 180-degree oven for 20 minutes. Take out of the oven, brush with olive oil for a golden brown crust, and put back in the oven for another 10 minutes.
