How to freeze berries and vegetables in a new way: ideas for drinks, soup, borscht and stews

Summer is the season for winter preparations. One option is to freeze berries, fruits, and vegetables. You can freeze them yourself by simply cutting them into pieces, or make an interesting mix. Berries can be used to make tea and compote, and vegetables can be used to make a mixture for future soups or vegetable stews.

Dietitian Tetiana Lakusta (dr.lakusta) shared her new way of freezing berries and vegetables for the winter on her Instagram page.

Berry mix for tea

Ingredients:

  • raspberries
  • blueberries
  • red currant
  • mint

Method of preparation:

1. Beat the berries in a blender and freeze them in an ice cube tray.

Zucchini for stews and soups

Ingredients:

  • zucchini
  • dill

Method of preparation:

1. Zucchini cut into cubes.

2. Chop the dill.

3. Mix zucchini and herbs, and freeze.

Vegetable mixture for borscht

Ingredients:

  • onions
  • carrots
  • tomatoes
  • beets

Method of preparation:

1. Cut the vegetables, grate the beets. Freeze.

Tomato puree for stew and borscht

Ingredients:

  • Tomatoes

Method of preparation:

1. Lightly cook the tomato.

2. Beat the vegetable with a blender until smooth.

3. Pour the puree into molds and freeze.
