One of the most popular methods of cooking tomatoes is fermentation. The appetizer turns out to be very spicy, juicy, and suitable for any side dish. But the tomatoes need to stand in the brine for a long time. To speed up the process, you need to add one simple ingredient.

A quick idea for making pickled tomatoes was published on the Instagram page of blogger Yulia (ta_yulya). According to this recipe, you need to put a crust of black bread on top of the tomatoes.

Technology of preparation of pickled tomatoes:

1. Wash the tomatoes, and put them in clean jars.

2. Pierce the tomatoes once with a needle closer to the top.

3. Add 2 tablespoons of salt to 1 liter of boiled water.

4. Pour this solution over the tomatoes in the jar with herbs: parsley and garlic (several cloves per 1 liter).

5. Add 1/3 of hot red pepper to a liter jar to spice up the flavor. You can also add horseradish and cherry leaves.

6. Cover with a lid, but leave room for air.

7. To speed up the fermentation, add the crust of black bread.

8. Keep at room temperature for 2 weeks until ready to use.
