How to cook the famous "Kurabiye" cookies with jam: a recipe for dough with butter
"Kurabiye" is an extremely popular oriental sweet in the form of cookies. They are made based on shortcrust pastry and filled with jam or jam. The dessert is very crumbly, and crispy, has a delicate texture, and just melts in your mouth.
Food blogger Yuliia (juli_co.ok) shared a recipe for real shortbread cookies "Kurabiye" with jam on her Instagram page.
Ingredients:
- flour – 230 g
- butter – 190 g (82%)
- powdered sugar – 75 g
- protein – 1 pc
- vanilla sugar – 1 tsp
- salt – a pinch
Filling:
- Jam/jelly
Method of preparation:
1. Soft butter beat with salt and powdered sugar until fluffy foam.
2. In the resulting mass gradually add the protein, continuing to beat.
3. Add the flour in two stages and beat the mass on medium speed with a mixer.
4. Put the resulting dough into a pastry bag. Squeeze the cookies onto the parchment.
5. Use a wet finger to make small dimples in the center of each cookie. Squeeze in the filling.
6. Bake at 180 degrees for 15 minutes.
