However, not everyone likes it when vegetables in the soup are overcooked and too soft. Still, it's quite possible to fix it. You just need to know one simple life hack.

Chef Olena Yersolenko shared how to make the perfect vegetable soup on Instagram.

According to the expert, the soup should not be boiled but simmered over very low heat. This way, the dish remains transparent, and the vegetables do not become too soft.

For the soup to be transparent, it needs to be simmered over low heat.

To make vegetable soup, you will need the following ingredients:

  • veal - 200 g
  • potatoes - 3 pcs
  • rice - 3 tbsp
  • bell pepper - 1/2 pcs
  • tomatoes - 3 pcs
  • Brussels sprouts - 5 pcs

Method of preparation:

1. Cut the veal and potatoes into cubes. Put in a saucepan with cold water and bring to a boil and reduce heat.

First, you need to boil veal with potatoes.

2. Rinse the rice and add it to the broth.

Rinse the rice before cooking.

3. Chop the pepper and add to the dish after 15 minutes.

4. Cut the tomatoes in half.

5. Add the tomatoes together with the Brussels sprouts. Simmer over low heat for another 10 minutes.
