How to cook sea buckthorn deliciously: tips from food experts

Despite the beneficial properties of sea buckthorn, not everyone likes its sour taste. Drinks made from this berry are the most common, as many different ingredients, including sugar, are added to them. But this specific product can also be used to make many delicious dishes.

Today, FoodOboz is sharing a selection of desserts, mousse, and meat with sea buckthorn.

No-bake sea buckthorn cheesecake from food blogger vistepina

Ingredients for the base:

  • whole grain biscuits - 50 g
  • sugar/powdered sugar - 1 tbsp
  • cocoa - 1 tbsp
  • walnuts - 1 cup
  • melted butter - 50 g

Method of preparation:

  1. Grind the following ingredients in a blender: nuts, cookies, cocoa.
  2. Combine with butter, and smooth into a baking dish.

Ingredients for the cream:

  • mascarpone cheese - 250 g
  • 250 g Philadelphia cheese - 250 g
  • honey - 2 tbsp
  • lemon juice - 1 tsp
  • sea buckthorn - 200 g

How to make the cream

  1. Squeeze the juice from sea buckthorn. Mix the cottage cheese and honey, add the finished juice to the mass, and mix everything. Put into a mold, and smooth the surface.
  2. Put the cake in the refrigerator for 3-4 hours.

Ingredients:

  • 2 stalks rosemary - 2 stalks
  • 2 duck breasts - 2 pieces
  • 1 sprig of sage sage - 1 sprig

  6. Cut the cheese into large cubes, and put on a baking sheet, previously covered with parchment. Place in a preheated oven for 5 minutes at 140 degrees.
  7. Cut the duck meat into medium slices and put on plates, put the cheese, pour sea buckthorn sauce and rosemary for decoration.

Ingredients:

  • sea buckthorn - 400 g
  • water - 600 ml
  • gelatin - 25 g
  • water for gelatin - 250 ml
  • sugar - 150 g

Method of preparation:

  1. Dissolve the gelatin and leave it for a while to swell.
  2. Grind sea buckthorn into a puree with a blender.
  3. Put the cake that remains in the sieve into a saucepan, add 300 ml of water, and add sugar.
  4. Grind the sea buckthorn into a puree, pour 300 ml of water, and rub the mass through a sieve.
  5. Put the cake in a saucepan, add another 300 ml of water and sugar.
  6. Boil for 10-15 seconds.
  7. Strain everything through a sieve.
  8. Dissolve gelatin in the sea buckthorn and sugar syrup, and cool.
  9. Combine everything, and beat for 2-3 minutes until foamy.
  10. Pour into molds, and put in the freezer for 30 minutes.
