Ingredients:

  • Sugar syrup - 1 tbsp.
  • Quince - 1 pc.
  • Dark chocolate - 70 g
  • Butter - 120 g
  • Sugar - 120 g
  • Vanilla extract - 1/2 tsp.
  • Flour - 200 g
  • Cocoa - 30 g
  • Baking powder - 1 tsp.
  • Eggs - 4 pcs.
  • Milk - 160 ml

For the chocolate sauce:

  • Cream - 150 ml
  • Butter - 20 g
  • Dark chocolate - 70 g

Method of preparation:

  1. Grease the bottom of the pan with sugar syrup. Put in the chopped quince.
  2. Melt the chocolate. Beat butter, sugar, and vanilla.
  3. Add flour, cocoa, and baking powder, then gradually add milk and eggs.
  4. Pour in the milk and beat until smooth.
  5. Pour the mixture into the quince. Cook over low heat for 2 hours until hardened.
  6. For the sauce: mix the cream and butter in a saucepan. Bring to a boil. Add the chocolate. Cook until the mass becomes homogeneous.
  7. Serve the pudding with hot sauce.

Nut pudding with quince and fennel

Ingredients:

  • Walnuts - 300 g
  • Eggs - 8 pcs.
  • Powdered sugar - 200 g
  • Juice of 2 lemons
  • Fennel seeds for serving
  • Quince - 2 pcs.
  • Sugar - 300 g

Method of preparation:

  1. Peel the quince from the core and seeds, but do not throw them away. Mix everything with sugar and 500 ml of water and simmer over medium heat until a syrup forms. About 15 minutes.
  2. Strain, then pour the syrup into a frying pan and simmer over medium heat until tender. About 15-25 minutes. Cool.
  3. Preheat the oven to 180 degrees.
  4. Grind the nuts to a state of crumbs.
  5. Beat sugar and egg yolks. Add the nuts and lemon juice.
  6. Beat the whites separately and then pour them into the yolk mixture.
  7. Put the dough into the mold. Pour the quince mixture on top.
  8. Bake for about 35 minutes.
  9. Sprinkle the finished cake with fennel seeds.
