How to cook pumpkin with apples: a spicy dish in 20 minutes

A vegetable like pumpkin goes very well with sweet and sour seasonal fruits, such as apples. The ideal cooking method is stewing. This dish has a bright, rich flavor, sweet and sour notes, and a very spicy aroma thanks to aromatic spices.

The recipe for stewed pumpkin with apples was published in one of the culinary blogs "Our Besagas - Food and Recipes" on YouTube.

Ingredients:

  • pumpkin - 500 g
  • salt - 1 tbsp
  • apple - 1 pc.
  • onion - 1 pc.
  • garlic - 2 cloves
  • parsley - 1 bunch
  • coriander - 1 tbsp.
  • red pepper
  • water -100 ml
  • salt - 1 pinch
  • oregano - 1 pinch
  • prunes - 20 g
  • balsamic vinegar - 1 tbsp
  • wine vinegar - 1 tbsp.

Method of preparation:

1. Cut the pumpkin and apples into medium-sized strips, onion into half rings.

2. Grind the coriander in a mortar.

3. Heat a frying pan. Add pumpkin, onion, coriander and red pepper. Stir to combine.

4. Immediately add the apples. Stir to combine.

5. Pour water and cook under the lid for 10 minutes.

6. After 10 minutes, remove the lid and cook until the water has completely evaporated.

7. Add chopped garlic, salt, oregano. Stir and fry until golden brown.

8. Add prunes and chopped parsley. Stir and fry for another 1-2 minutes over low heat.

9. Add the vinegar. Stir to mix.

10. After 1-2 minutes add sugar. Stir and fry for another 2 minutes.
