How to cook okroshka in an unusual way: an original idea from a cook
Okroshka is a real summer, a refreshing dish based on fresh vegetables, as well as mineral water, kefir, or kvass. You can add spices, lemon zest, and even garlic to enhance the flavor.
Culinary expert Mykola Liulko shared on Instagram a recipe for a delicious, light okroshka with mineral water that will always work.
Ingredients:
- Cucumbers – 200 g
- Smoked chicken – 400 g
- Boiled chicken egg – 6 pcs.
- Boiled potatoes – 300 g
- Dill – 50 g
- Green onions – 60 g
Dressing:
- Zest of 1 lemon
- Lemon juice – 0.5 pcs.
- Dijon mustard – 2 tbsp.
- Yogurt – 3 tbsp.
- Ayran – 900 g
- Mineral – 400 g
- Salt – 30 g
Method of preparation:
1. Boil the potatoes, and cut them into cubes along with eggs, dill, meat, and onions.
2. Dressing: mix yogurt with arrowroot, and mineral water, add zest and lemon juice, as well as mustard, and mix everything.
3. Put the ingredients in a bowl and pour over the delicious dressing, mix and eat.
