Culinary expert Yevhen Klopotenko shared on his website the secrets of cooking millet and choosing the right cereal for your dishes.

How to choose millet and what to look for

When choosing this cereal, pay attention first of all to the expiration date, as well as to the color of the grains, they should be a deep yellow color. As for the packaging, it should be airtight, and be sure to pay attention to the shelf life of the cereal so that the dishes made from it are not bitter.

"At home, you need to store millet in an airtight container, such as a glass jar that closes tightly," the chef explained.

Preparation for cooking

First, pour boiling water over the millet for 5 minutes. After that, be sure to drain it off and rinse it again with cold water until the water is clear.

"You don't have to wait 5 minutes, but rinse the cereal several times with boiling water in a fine sieve. This is necessary in order to avoid bitterness in the finished dish," Klopotenko said.

It can be cooked with water, milk, and cream, as well as mushroom, meat, and vegetable broth.

The cook advises to observe the proportions: 1 cup of millet and 3 cups of liquid.
