How to cook Mexican quesadillas: 5 quick recipes

A new gastronomic trend has taken over social media – quesadillas with a variety of fillings that can be prepared in a few minutes.

It all started with a post by food blogger Ai. At the end of December, she posted a video on her Instagram with a life hack on how to easily make a quesadilla in a few minutes.

To do this, make an incision in the tortilla as if you wanted to cut it into four pieces, then conditionally divide the tortilla into four equal sections and fill each of them with a different filling. Roll up and grill the triangle until golden brown.

The recipe had the effect of an unexploded bomb: it gained an unrealistic number of likes and reposts and migrated from Instagram to TikTok, where you can find a million videos of quesadillas with a variety of fillings under the hashtag #TortillaTrend. As people have started cooking at home more often due to the pandemic, many people have taken to this food: videos with recipes for Mexican tortillas have already gained more than 2 billion views.

Quesadilla with egg and beans

  • tortilla - 2 pcs.
  • eggs - 2 pcs.
  • milk or cream - 4 tbsp.
  • canned beans - 3 tbsp.
  • salt, pepper - to taste
  • hard grated cheese - 2 tbsp.
  • oil
  1. Beat eggs with milk or cream and add salt and pepper. Pour into a heated and oiled frying pan and start stirring immediately – the eggs should clump together and turn into a mush.
  2. Put the canned beans and the cooked scrambled eggs on the tortilla and sprinkle with grated cheese.
  3. Fold the tortilla in half and place in a heated and oiled frying pan. Fry until golden brown on both sides.

Quesadilla with shrimp and guacamole

  • tortilla - 2 pcs.
  • guacamole - 2 tbsp
  • frozen shrimp (peeled) - 200 g
  • hard grated cheese - 2 tbsp.
  • oil
  1. Boil the shrimp in salted water: put them in boiling water and cook for no longer than five minutes.

  3. Top with boiled shrimp and sprinkle with grated cheese. Fold the tortilla in half and put it in a heated and oiled frying pan. Fry until golden brown on both sides.
