How to cook jam to preserve the maximum benefits: effective tips
Jam is not only a delicious but also a very healthy product for preservation. But only if it is properly prepared, because only then will it retain useful trace elements and vitamins.
As a rule, jam is cooked in 2-3 steps, boiling it for 3 minutes. Allow the jam to cool completely between passes. This method of cooking is the most gentle, but quite often it is simply boiled for 10 minutes, or until the jam becomes quite dense. FoodOboz.ua figured out how to cook jam correctly to preserve the maximum benefits.
The basics of cooking
Berries for fruit should be cleaned and washed thoroughly. Then they should be chopped into random pieces, or left whole if the size of the berries is small. The next step is to make jam. To do this, add sugar, which is a strong preservative. If you follow all the rules, the jam will easily stay fresh throughout the winter.
Proportions
For a proper jam that can last for a whole season, you should use an even amount of sugar and berries. That is, for 1 kilogram of fruit, take 1 kilogram of sugar.
Cooking utensils
Jam should be prepared in a steel or brass cookware. A wide-bottomed bowl is ideal. In this case, the fruit at the bottom of the dish will not soften under the weight of the upper ones.
The container
Jam should be put in sterilized jars. They are washed in hot water with baking soda, and then heated for 10 minutes in an oven at 60 degrees until they are completely dry. There are also other methods of sterilization.
Heating
Jam should be cooked at a moderate degree of heat. Only then will it not burn to the bottom of the container, and it will retain the structure of the berries and all the necessary vitamins.
Finish
The thickness of the syrup drop indicates the jam is ready. A drop of syrup should not run down the spoon quickly. The consistency is considered ideal when a drop of syrup has only slightly dropped down the spoon.
