How to cook hummus successfully: three options from Anita Lutsenko
With the arrival of autumn, the chickpea season is just beginning. This is an extremely healthy product from the legume family. Chickpeas are the main ingredient and a successful combination in many dishes. One of the favorites is hummus, an impeccable cold appetizer.

Ingredients:
- Chickpeas - 250 g
- Parsley - 10 g
- Mint - 10 g
- Sesame paste - 90 g
- Fennel seeds - 1\3 tsp.
- Cumin seeds - 1\3 tsp.
- Lemon juice - 5 tbsp.
- Beetroot juice - 50 ml
- Garlic - 1 clove
Option 1.
Method of preparation:
- Pour water over the chickpeas and add baking soda. After the legumes have brewed, drain and boil.
- Put them in a blender, add chopped garlic, lemon juice, sesame paste, fennel seeds and cumin seeds, and salt. Blend until smooth.
- Drizzle with olive oil and sprinkle with seeds to taste.
Option 2.
Method of preparation:
- Add parsley and mint to the mass from the previous version. Beat with a blender.
Variation 3.
Method of preparation:
- Pour the beetroot juice into the mass obtained from the previous variant. Beat with a blender.
