How to cook healthy sweet potato pancakes: YoungChef shares an exclusive recipe
The value and importance of such an autumn vegetable as sweet potato is completely underestimated. People often choose simpler vegetables instead, thinking that a healthy vegetable is very difficult to cook. But this is not the case at all.
First of all, it is very healthy, has a powerful antioxidant effect, and contributes to the overall strengthening of the body in the autumn and winter. Experts especially recommend eating it for people with diabetes, as it can normalize sugar and stabilize insulin.
Sweet potatoes are very easy to prepare; they can be boiled, baked, soups, and added to pies.
The popular Ukrainian food blogger YoungShef shared with FoodOboz an exclusive recipe for delicious and, most importantly, healthy sweet potato and oatmeal pancakes that can be eaten both for breakfast and lunch.
Ingredients:
- sweet potato – 1 pc
- baking powder – 1 tsp
- oatmeal or wheat flour – 2 tbsp
- egg – 1 pc
- olive oil for frying – 1-2 tbsp
Method of preparation:
1. Wash and dry the sweet potatoes, wrap them in foil, and bake for 20 minutes at 200 C.
2. Mash the cooked sweet potatoes with a fork, add the flour, baking powder, egg, and mix well.
3. Heat a frying pan, pour in vegetable oil, spoon the pancakes, and fry well on both sides until golden brown.
4. Transfer them to a paper napkin to remove excess oil.
Serve the delicious dish with chocolate syrup, peanut butter, and coconut flakes.
