Dorado baked with figs and almonds according to Yuliia Vysotska's recipe
Ingredients:
- Dorado with head – 2 pcs
- almonds – 3 handfuls
- oranges – 1 pc
- dried figs – 8 pcs
- pitted olives – 3 handfuls
- garlic – 1 clove
- Extra Virgin olive oil – 5 tbsp
- coriander seeds – 1 pinch
- peppercorns mixture – 1/4 tsp
- coarse sea salt – 1 pinch
Method of preparation:
- Gut the fish well, rinse, and dry with paper towels.
- Chop or slice the almonds, and add the orange zest.
- Cover a baking sheet with parchment, put the fish on it, and sprinkle with the almond and zest mixture.
- Slice the dried figs and orange and add them to the fish along with the olives.
- The most important thing is to mix freshly ground pink pepper, coarse salt, chopped garlic, and olive oil, mix, and pour it over the fish.
- Then put it in the oven for 20 minutes at 180 C.

Ingredients:
- sea bass – 2 pcs
- fennel – 2 pcs

- butter – 20 g
- white wine – 100 ml
- salt, pepper – to taste
Method of preparation:
- Gut the fish, and season the outside with salt and pepper.
- Chop the fennel and put it inside the fish, add capers and lemon slices.
- Sprinkle the fish with dill, add the chopped butter, drizzle with olive oil, and wrap in foil.
- Put the fish in the oven to 200 C and bake for about 20 minutes.
- Set aside to cool slightly and serve with vegetables.
