Ingredients:

  • Dorado with head – 2 pcs
  • almonds – 3 handfuls
  • oranges – 1 pc
  • dried figs – 8 pcs
  • pitted olives – 3 handfuls
  • garlic – 1 clove
  • Extra Virgin olive oil – 5 tbsp
  • coriander seeds – 1 pinch
  • peppercorns mixture – 1/4 tsp
  • coarse sea salt – 1 pinch

Method of preparation:

  1. Gut the fish well, rinse, and dry with paper towels.
  2. Chop or slice the almonds, and add the orange zest.
  3. Cover a baking sheet with parchment, put the fish on it, and sprinkle with the almond and zest mixture.
  4. Slice the dried figs and orange and add them to the fish along with the olives.
  5. The most important thing is to mix freshly ground pink pepper, coarse salt, chopped garlic, and olive oil, mix, and pour it over the fish.
  6. Then put it in the oven for 20 minutes at 180 C.
